    • 2-inch piece of fresh turmeric, peeled and sliced
    • 1-inch piece of fresh ginger, peeled and sliced
    • 4 shallots, peeled
    • 3 cloves garlic, peeled
    • 2 lemongrass stalks, white part only, thinly sliced
    • 2 kaffir lime leaves, thinly sliced
    • 1 tablespoon tamarind pulp, soaked in 2 tablespoons of warm water and strained
    • 1 teaspoon palm sugar or brown sugar
    • 1 teaspoon salt

  • Instructions:
    1. Begin by soaking the dried chilies in hot water for about 10 minutes until they soften. Drain the water and remove the stems.
    2. In a blender or food processor, combine the soaked dried chilies, shallots, garlic, kaffir lime leaves, tamarind pulp, palm sugar, salt, and all fresh spices slices.
